Chef Carlos Portela is a Puerto Rican chef and founder of Orujo Taller de Gastronomía, a space dedicated to exploring Puerto Rico's culinary identity through territory, memory, and experimentation. A graduate of Johnson & Wales University, he was named Best Chef of the Caribbean by the Caribbean Hotel & Tourism Association (2005), a 2024 James Beard Award Finalist for Best Chef: South, a 2025 JBA Semifinalist for Outstanding Chef, and recognized by The Best Chef Awards 2025 with the One Knife distinction. His work develops the concept of Gastronomía de Entorno (Environmental Gastronomy), a constantly evolving cuisine that connects local ingredients, fire, fermentation, preservation, and contemporary techniques to interpret, rather than imitate, the Puerto Rican landscape and culture.
